Chicken, Mango and Cos Salad
75g Chicken Tenderloin ½ Tsp Piri Piri Seasoning
5 small leaves torn Cos Lettuce ½ seeded, peeled, chopped Mango
5 Trimmed, sliced diagonally Snow Peas ¼ sliced Lebanese Cucumber
½ cup Watercress 20g chopped Unsalted Cashews
2 Tsp White Balsamic Vinegar
Lightly spray chicken with oil. Sprinkle with seasoning.
Pay-fry chicken 1 2 minutes on medium each side until cooked. Cool and slice.
In a bowl, combine all remaining ingredients, tossing gently.
