Chicken, Tofu & Vege Stir-Fry


1 Tsp Vegetable Oil  
1 small sliced Garlic Clove
½ Tsp shredded peeled Ginger 
60g seeded, peeled thinly sliced Pumpkin
¼ sliced Carrot   
50g sliced firm Tofu
50g sliced Chicken Tenderloin 
1 cup shredded Wombok
2 sliced Green Onions  
2 Tsp Tamari Sauce
2 Tsp Chilli Sauce  
½ cup Baby Spinach Leaves


In wok, heat oil on medium. Stir-fry garlic and ginger about 30 seconds.

Add pumpkin and carrot and stir-fry 2 3 minutes until just tender. 

Mix in tofu, chicken, wombak, green onion and sauces.

Stir-fry 2 3 minutes until chicken is cooked.

Toss spinach through.

Serve with extra green onion.
