Chinese Cabbage & Chicken Salad
1 Chinese cabbage
2 sticks celery
4 red radishes, finely sliced
1 red apple
120g roast chicken breast
½ cup low fat cheddar cheese, grated
2 tbs light olive oil
1 tsp white wine vinegar
1 tsp light soy sauce
1 small knob fresh ginger, grated
1 tbs currants
Peel the celery then, using a sharp knife or a mandolin, cut both the cabbage and celery as finely as possible.
Place into a large mixing bowl with the radish.
Quarter and core the apple and slice finely. Tear chicken breast into small pieces, and then mix it and the cheese into the salad.
To make the dressing, place all the ingredients into a jar with a lid, and shake well.
Pour over salad and mix through.
